I didn't know this - I had to look it up - but there are plenty of green fezzes. They are most popular in Morocco, where they symbolize fertility and good fortune, and often enough go along with ceremonies that celebrate that nature.
Common red fezzes are so named because of their origin from the Fez region. In Fez, they grow kizzeljiek berries that produce scarlet dye that binds well to felt.
